Pizzeria Bianco has been on our short list for a while, but we've always put it off because we're usually short on time and the alleged wait time was too long. But last night everything clicked and we set off for Heritage Square in the early evening. There's a small lot next to the restaurant, but it was completely full, with an extra car or two parked improperly. We ended up parking on the street a block away and feeding the meter.

Once inside we were greeted quickly and informed that the wait was expected to be about 45 minutes. Well, that's less than 2 hours, which is what I'd been led to expect. We headed next door to the bar, also owned by Chris Bianco, to have drinks while we waited. The bar is a refurbished house with one smallish room containing the bar, and the rest of the house is cocktail tables, comfy chairs, etc. We were about halfway through our first round when we were informed that we could be seated in the restaurant.

We took our seats at a little table for two with little chairs. Our server introduced himself promptly and took our drink orders. For appetizers we had mozerella wrapped in proscuito (I think), and crusty country bread. They brought them out quickly and both were delicious.

We narrowed our pizza choice down to two, but my wife really wanted to taste Bianco's sauce so we chose the “Sonny Boy.” The ingredients were top notch and fresh, and all the flavors blended nicely. The crust was perfect, as you can only get with a wood fired oven.

Our total for the pie and two beers was a touch over $30, plus a decent tip for the excellent service. On our way out Chris Bianco stopped what he was doing and thanked us for coming in. It's nice to see someone doing something and doing it well. It's pretty obvious that Bianco could expand and really cash in. Instead, he's there making incredible food every night. I really want to get back and try the rest of the menu!
